Organic eggs cost considerably more than conventional ones, but that premium mostly pays for how the hens are raised, not for a more nutritious egg, as Martha Stewart’s Randi Gollin reports. When it comes to nutrition, what the hen eats matters far more than the word on the carton.
The organic label means hens eat organic feed, made without grains grown with synthetic pesticides or fertilizers and without GMO grains. They’re also raised under USDA welfare rules, tightened starting in 2023 through the Organic Livestock and Poultry Standards, which require outdoor access, ban cages and prohibit forced molting. Bigger space requirements and pricier organic grain explain the higher price tag.
So does all that produce a better egg? Not reliably. “Organic is better understood as a production standard than a nutrition guarantee,” said Lauren Manaker, a registered dietitian nutritionist and founder of NutritionNowCounseling.com.
“Organic eggs tend to have about the same protein as regular eggs, and while some studies find modest differences in omega-3s, vitamin D, or certain fat-soluble nutrients, those differences are not consistent enough to treat organic eggs as clearly more nutritious across the board,” Manaker said.
Those modest nutrient gains come from diet, with or without an organic label. Lisa Steele, a fifth-generation chicken keeper and author of the Fresh Eggs Daily blog, notes that any hens that roam outdoors and eat a varied diet of weeds, grass and insects lay more nutritious eggs. For shoppers who care about nutrition, Manaker says specific claims like “omega-3 enriched” are more useful than “organic,” since feed can measurably raise an egg’s omega-3 content.

Nor does organic mean safer. Organic flocks can’t receive routine antibiotics, which may ease some shoppers’ concerns, but the eggs still face the same risks between farm and plate.
“Organic eggs are not automatically safer from Salmonella; handling, refrigeration, and cooking practices are still the main food-safety practices,” Manaker said.
